GRAY MONK MERLOT V
Grapes from the southern Okanagan Valley were used for the Merlot. The juice underwent malolactic fermentation for 2-3 weeks and was then aged in oak barrels for 8 months. Before bottling the wine went through fining and minimal filtration to enhance varietal characteristics.
This Merlot is deep garnet in colour with an aromatic bouquet of black cherry, roasted coffee bean, sweet oak and dark chocolate. This medium-bodied wine has soft drying tannins, and flavours of ripe cherry and plum fruit accented by notes of cocoa and spice. Lovely notes of black tea, red berry, cocoa and spicy oak linger on the finish.
