The Apothic winemaking team exercised meticulous temperature control throughout the winemaking process. As fermentation progressed, winemakers managed heat spikes to maximize the extraction of fruit flavours and colour. Post-fermentation, the wine was aged on oak staves to enhance the sweeter notes of vanilla, mocha, and toffee, which give Apothic its distinct and memorable character.
